•Gives dough the elasticity, helps it rise and keep its shape.
•Also used in other food as binding agent and flavouring for enhanced texture.

•Gluten-free food helps manage symptoms of Celiac disease, Wheat allergy, Gluten sensitivity and Irritable Bowel Symptoms (IBS).

3 Cooking Method:
1.Boil for 5 minutes. Serve with desired sauce or soup. (then, soak in cold water for enhanced
texture)
Make sure the water is boiling before putting in the noodle.

2.Soak 1 hour in clean water at room temperature. Serve with desired sauce or soup.

3.Noodles can be served as;
a)Stir-fried
b)Cold dish (with soy sauce or other condiments)

Cooking Tips:
1.Use 2/3 of water when boiling noodle > to avoid messy stovetop.
GF noodle tends to be starchier than regular noodle. Thus, it is normal for boiling water to foam/thickened when cooking.

2.Drizzle some cooking/olive oil to water & stir every 30 seconds until starts soften
> to avoid noodle stick together.
Because of starch, noodles tend to stick together when boiling.

3.Immediately transfer noodle to bowl/plate for sauce mixing or soak in cold water
> to prevent noodle stick together or gets mushier (further soften).

Or
drizzle some olive oil if sauce is not ready.

What if gluten-free noodle is under-cooked or over-cooked?
- It is highly recommended to follow the cooking time at the back of the packaging.

Undercook
– noodle texture hard and not good for the stomach

Overcook
– noodle become mushy, texture may not be springy as desired
